Ingredients
  • 90 g Brushwoods Fresh Rolled Oats
  • 100 g Plain Greek Yoghurt
  • 35 g Light Cream Cheese
  • 15 g Chia Seeds 1 tbsp
  • 1 cup unsweetened Almond Milk
  • 1 tsp Baking powder
  • Stevia/Sweetener to taste
  • 125 g Fresh Blueberries
Instructions
  1. Preheat oven to 180 degrees Celsius

  2. In a bowl, mix all the ingredients except the blueberries

  3. Fold the blueberries into the mix

  4. Pour the mixture into a lined baking tray and bake for 40 minutes

  5. Serve with a dollop of Greek yoghurt and a drizzle of maple syrup

  6. Lasts in the fridge for up to 5 days

A grain and lentil side dish that is packed with fibre and a is a delicious addition to any meal

Ingredients
  • 1 cup Brushwoods Groats uncooked measure
  • 1.5 cup Cold Water
  • 1 can Brown Lentils 400g
  • 1 Diced Onion
  • 1 tbsp Cumin Powder
  • 1 tsp Coriander Powder
  • Salt and Pepper to taste
  • Brushwoods Extra Virgin Olive Oil
Instructions
  1. Cook groats according to packet directions i.e. - in a medium pot, add groats and water, bring to a boil and simmer for around 30-40 minutes or until the water is absorbed.

  2. In a large fry pan, add a splash of oil and the onion and sauté until slightly golden. Add in the spices and mix for about 1 minute.

  3. Add in the cooked groats and lentils, stirring until well combined, add the salt and pepper and serve with a little extra olive oil and salt on top. Yum!

Super easy blender pancakes that will leave you super satisfied. More rustic than traditional pancakes for those who like a bit of texture.

Ingredients
  • 2 Eggs
  • 1 Ripe Banana
  • 0.5 cup Brushwoods Fresh Rolled Oats
  • 1 tbsp Cinnamon
  • 1 tbsp Lemon Zest
  • 1 tsp Lemon Juice
  • Brushwoods Extra Virgin Olive Oil for pan-frying
Instructions
  1. Add all ingredients except the oil into a blender or nutribullet

  2. Blitz until a small batter forms

  3. Heat a medium sized pan to a medium heat

  4. Add one tsp of oil (or butter) and heat until melted and covers the whole pan

  5. Add 1/4 cup pancake mix at ta time. You can do about 3-4 pancakes in the pan at a time

  6. Once the edges begin to bubble, flip the pancakes and cook for a further 1-2 minutes

  7. Remove from the pan and serve

  8. Serve with your favourite toppings

A simple but delicious salad that will wow your family and guests. It’s super simple, keeps really well and is very portable if you're heading to a friends place and need to take a salad.

Ingredients
  • 1 Large Head of Broccoli Chopped
  • 1/2 cup Brushwoods Groats Uncooked
  • 1/4 cup Almonds Chopped
  • 1/4 cup Dried Cranberries
Dressing
  • 1 cup Mayonnaise
  • 3 tbsp Cider Vinegar
  • 2 tbsp Sugar
Instructions
  1. Cook the groats in water as per packet instructions. Drain and Cool.

  2. Mix salad ingredients in a bowl

  3. Mix dressing ingredients in a separate bowl

  4. Stir dressing through salad

Recipe Notes

For a non-vegetarian version add 1/2 cup cooked diced bacon and/or 100 g crumbled feta.  Diced avocado also works well in this salad although it does affect how well the salad stores.  

Feel free to change it up and add 1/3 cup red onion (diced) and/or a sprinkling of pumpkin or sunflower seeds.

Keep some cooked groats in the fridge to add to your salads during the summer months to make salad prep super quick and easy.  They store for a 5-7 days in a sealed container.

We know loads of mums look for gorgeous homemade gifts to give to teachers etc or for the person who has everything. This festive granola would be perfect in a glass jar with a cute ribbon and to us the taste is Christmas in a jar.

For me it is sweet enough but for the sweet toothed gift givers (or receivers) a sprinkle of cinnamon sugar could be used instead of ground cinnamon at the end.

Ingredients
  • 1 cup Brushwoods Fresh Rolled Oats
  • 1/4 cup sweetened dried cranberries
  • 1/4 cup shredded coconut
  • 1/4 cup macadamia halves
  • 1/4 cup honey
  • 2 tbsp vegetable oil
  • 1/4 cup goji berries
  • 1/2 cup chopped dried apple
  • 1/2 cup pecan nuts
  • Sprinkle of ground nutmeg and ground cinnamon or cinnamon sugar if you have a particularly sweet tooth
Instructions
  1. Mix together the honey and oil and set aside
  2. Grab a big bowl and add the oats, cranberries, coconut, macadamias and then add the honey oil mixture to this and mix really well.
  3. Place on a large baking tray lined with baking paper and place in a preheated oven at 150 degrees to slowly cook and go golden. Make sure you have spread your mixture all over the tray and it is as thin as you can get it.
  4. At the 12 or 13 minute mark take the mixture out of the oven, mix well and spread evenly and thinly again and place back into oven to cook for another 10 minutes.
  5. Check on your mix while it's cooking as every oven varies and when it is golden (not necessarily crunchy as it goes harder when you cool it down) it's ready. Total cooking time is likely to be around 25-35 minutes.
  6. Now add the goji berries, chopped apples, pecans and mix well. Sprinkle with some nutmeg and cinnamon (amount up to you depending on your taste but as a guide we use about a teaspoon of cinnamon and a half teaspoon of nutmeg) and mix well to combine.
Recipe Notes

Make sure you keep a batch for yourself – it goes so nicely over some fresh vanilla or natural yoghurt for breakfast, the perfect Christmas morning breakfast. If you are giving this as a gift it looks beautifully displayed (and stores well too) in a glass jar with an air tight lid. Tie some ribbon around it and voila you have an easy and thoughtful gift for the person who has everything! Merry Christmas xx

Groat Risotto

The texture of the Groats in a risotto is just delightful - slightly chewy but still with the creaminess of a beautiful risotto.  You can simply replace the rice with a like proportion of groats in most risotto recipes - just make sure you give the groats at least 30 minutes cooking time to ensure they have lost their 'crunch'.  This recipe is a typical meat free risotto but feel free to add meat or serve with meat as a side dish.

Ingredients
  • 2 palm sized pieces of pumpkin any variety grated or cut into small pieces
  • 1 red onion medium sized grated or finely chopped
  • 1 teaspoon crushed garlic
  • 1 cup Brushwoods Groats
  • 1/4 cup Brushwoods Extra Virgin Olive Oil
  • 2 cups stock chicken or vegetable
  • 1 cups water
  • Salt and pepper to taste
  • 2 handfuls of washed baby spinach roughly chopped
  • 1 cup grated Parmesan cheese
  • 1/2 cup full fat thickened cream optional
  • Fresh chopped parsley to garnish
Instructions
  1. Place pumpkin, onion, garlic, groats and oil into a large pot it and saute until onion changes colour.

  2. Add water and stock and bring to the boil. Once boiling turn down and simmer, occasionally stirring to check liquid levels. You want this to cook away until most of the liquid absorbs and groats are tender, approx 45 minutes.
  3. Once cooked turn off the heat and add spinach, cream and cheese and give it a good stir.
  4. Serve with some fresh chopped parsley and more cheese
